Why Lava Stone
Once heated, lava stone gives off far-infrared heat that reaches the centre of the dough quickly, so bread and pizza keep their moisture instead of drying out.
Its porous structure holds heat and moisture well between bakes.
Minerals in the stone help neutralise odours inside the chamber, so baked goods come out with a clean fermentation aroma.
Trace minerals from the stone are released into the food during baking.
Flue Filter (GLQ Series)
The GLQ water-curtain filter is made for pizza ovens, steak ovens and similar flue outlets. Exhaust gas passes through a water curtain that traps soot and lowers the exhaust temperature, and the filtered air meets the national discharge standard. The unit uses about 80 litres of water per hour, discharged together with the wastewater.
Soot removal: on wood-fired pizza ovens, the filter removes about 95% of soot from the chimney exhaust.
Heat reduction: exhaust temperature drops from 250°C before filtration to about 50°C after it.
Low maintenance: open the cleaning valve at regular intervals to flush out settled sediment, and routine maintenance is done.
Flexible siting: suitable for indoor and outdoor installation.
Simple to install and secure in place.
Water pressure: 2.5 kg/cm² at normal pressure.
Water use: about 80 litres per hour at normal pressure.
Model GLQ-1: for pizza ovens; capacity 10m²/min; dimensions 600×600×600mm; material SUS 304.
