Teppayaki Grill Table | What is the difference between hibachi and teriyaki chicken

They may be cooked in the same way, but "teriyaki" literally means "glossy grilled," referring to the sweet-smelling luster of teriyaki chicken. The only difference from the hibachi is the sauce, as the hibachi chicken is only grilled in soy sauce, so there is no luster.

 

 

Additional Tips and Tricks

 

I've seen some cooks add sesame seeds to the hibachi chicken and sesame oil, but some don't. I always do this because it adds a lot of flavor.

Some cooks may also include mushrooms in their cooking. Since the liquid released from the mushrooms interferes with the browning process.

I like to cook them separately. It's easier to do this on a larger teppayaki grill table, but it's next to impossible on a 12-inch pan.

Also, mushrooms don't grill at the same rate as chicken, so it's not practical to cook mushrooms in the same pan at the same time.

Teriyaki sauce can still be used in your chicken hibachi recipes if you like to use it, I've seen some cooks add it. It's not that traditional or authentic.

In this recipe, a tablespoon or two is enough.

If you do, you may be tempted to skip the oils that can overshadow your teriyaki sauces.

This chicken recipe would be great with a hibachi rice mix. Remember to cook the rice first so you can set it aside and keep it warm while you prep the chicken.
