Teppanyaki Griddle | How to make the best hibachi fried rice at home?
1. Scrambled the eggs. Heat a wok, teppanyaki griddle, or Dutch oven to high heat. When the weather is hot, add oil and quickly fry the eggs into the pot. Take the eggs out of the bowl or plate and set aside until later.
2. Fry the onions. Add the butter to the pan and let it melt. Then, add the onions and fry for a few minutes until they are soft. You don't want the onion to turn yellow, just soften it. Add minced ginger and give it a few minutes to cook out the ginger flavor. Then put the rice and scrambled eggs into the pot. Flatten the rice into a thin layer. This is where the "frying" part happens. Stir the rice, then flatten it into a layer, and let it sit for another 30 seconds. You want to do this a few times so that the rice will make a hissing sound, but it won't burn!
3. Make fried rice. Drizzle the soy sauce and sesame oil on the rice, let it sizzle, and soak it all in. Stir so that all the rice has a little soy sauce. When the rice has absorbed the sauce, and when the rice starts to burst again, you can turn off the heat and that's it.
Can I add protein to this recipe, or what do you suggest to eat on the side?
If you want, you can add cooked chicken, shrimp or steak to the rice. This is very effective for grilled meat! I like to use my miso ginger salmon to serve this hibachi fried rice. You can also eat garlic butter steak, shrimp or steak bite on this side!
Tips for making the best hibachi fried rice:
1. Using a large and wide pot, a griddle works more efficiently. The wide pot has a larger surface area, and when you add the sauce, you can "fry" everything instead of steaming. You can use a wide cast iron pan, or if you have a cast iron griddle, that will work very well!
2. Keep the heat setting high. Cooking fried rice at a high temperature allows the ingredients to be fried in the pan instead of steaming.
3. Use high heat oil. We use a combination of butter and oil to make the taste of butter and oil have a high smoke point.
4. Make sure you remove the eggs. You need to make sure to remove the eggs so that the eggs will not turn into rubber bands when the onions are fried. When you add rice, don't forget to add them back!
5. Don't take soy sauce lightly: I have been discovering that store-bought fried rice, if you eat it yourself, always lack so many seasonings. But remember, if you are using fried rice, you may not want to season it so aggressively. Therefore, I recommend using 2 tablespoons of low-sodium soy sauce.
