Cooktop Compatibility

Different teppanyaki plates are designed for certain types of cooktops and grills.

For example, induction furnaces are generally not compatible with these types of steel plates if they are not perfectly flat. Also, some, like Everdure, are designed for a specific style of gas grill.

Non-flat or ceramic gas and electric ranges are usually compatible with teppanyaki plate.

 

Steel Plate Size

The most important consideration when shopping for a teppanyaki plate for your stovetop or grill is size. It has to fit perfectly or it's not safe to use.

Another thing to consider is how many people you want to cook for. For couples and small families, a small plate that covers two stove burners is usually sufficient.

Most small teppanyaki plates are about 40–60 cm. These plates are roomy enough so you can cook all your breakfast favorites like pancakes, sausage, hash browns, okonomiyaki and more.

However, larger homes may require a large pan that covers all of the stove burners and heats up very quickly.

Larger teppanyaki flat tops are usually 90 cm or longer. Some extra-large grills are also big enough for large outdoor grills, but they can be difficult to store if you live in a smaller home.

Grill Material

Teppanyaki grills are made from a variety of materials.

These include cast iron, stainless steel and aluminum.

A stainless steel teppanyaki grill is the way to go, and it's also easy to clean if you want a nonstick cooking surface. This material is the easiest to use if you hate scrubbing and cleaning dishes.

Stainless steel is also great at distributing and retaining heat, so you'll love cooking with it.

However, there is another great option: cast iron. This is a heavier material but outperforms stainless steel in terms of heat distribution.

Since cast iron is a great heat conductor, many chefs prefer to use this type of grill because food cooks quickly and evenly on this surface.

Cast iron needs to be seasoned with oil, which some people find inconvenient. If you don't season your grill plate, food will stick to it and get burnt.

Aluminum is the cheapest option and is usually found in cheap products, but it still works. It's harder to clean up though, and you end up doing more scrubbing.

 

Cleaning

Almost all modern teppanyaki grills have some sort of nonstick coating, so they're easy to clean with a griddle scraper or rag. Clean the nonstick coating with warm water and a cloth or paper towel.

Most teppanyaki grills have a nonstick coating, which allows them to be wiped clean with a warm cloth after they have been used and cooled.

If there is no non-stick coating, then you can season the dish to keep the food from sticking.

 

Handles

Many of the best models have at least one handle, either on the side or bottom of the grill plate. This makes it easy to maneuver the plate while setting up and cooking.

The handle also ensures that you can grab hot plates without burning yourself (wear gloves, though!).

It's okay if the dish doesn't have a handle, but you'll need to wait until it's completely cooled before moving it.
